Cooking tomatoes and adding a bit of extra virgin olive oil helps to boost the bioavailability of lycopene, a powerful, fat soluble antioxidant. Researchers believe lycopene helps to protect against prostate cancer, cardiovascular disease as well as preventing sunburn and wrinkles.
